Professor Muszyńska emphasizes that mushrooms, though often treated merely as an addition to dishes, hold immense health potential.

They contain not only protein but also numerous bioactive substances, such as polysaccharides, beta-glucans, antioxidants, as well as vitamins and microelements.

The professor explains that regular consumption of certain mushrooms can support the immune system, contribute to improving skin and hair condition, and even have neuroprotective effects.

The conversation also touches upon the use of mushrooms in complementary therapies – supporting traditional treatment methods.

Professor Muszyńska cites studies showing that mushrooms like Lion's Mane or Reishi can act synergistically with medications, supporting the body in fighting diseases.

Chitin and polysaccharides – natural protection and support for the intestines

Professor Muszyńska explains the crucial role that compounds found in mushrooms, such as chitin and endopolysaccharides, play in gut health.

Chitin is one of the key structural components of fungi that our enzymes cannot digest. However, for the bacteria inhabiting the intestines, it is an excellent food source.

When the gut microflora "feeds" on chitin, it develops properly and strengthens its protective functions. This process leads to the production of short-chain fatty acids, which have anti-inflammatory effects and positively influence the state of the intestines.

As a result, the integrity of the intestinal epithelium improves, as does its ability to properly absorb nutrients.

Professor Muszyńska emphasizes that chitin acts as a natural "cleanser" – it binds toxins and mechanically cleanses the intestines, which can also help in weight regulation by inducing a feeling of satiety.

Another valuable component is endopolysaccharides – water-soluble polysaccharides such as beta-glucans and mannans, which directly affect the immune system.

These substances have immunomodulatory effects – they stimulate the activity of macrophages, and then lymphocytes, thereby supporting the body's defense mechanisms. Endopolysaccharides also have antiviral and antibacterial properties, which makes them exceptionally valuable for health.
